For this reason, the transport systems are arranged differently in root and stem – in the root it has to resist forces that could pull the plant out of the ground. In the stem it has to resist compression and bending forces caused by the weight of the plant and the wind. Transpiration explains how water moves up the plant against gravity in tubes made of dead xylem cells without the use of a pump. Water on the surface of spongy and palisade cells (inside the leaf) evaporates and then diffuses out of the leaf. This is called transpiration. More water is drawn out of the xylem cells inside the leaf to replace what's lost. As the xylem cells make a continuous tube from the leaf, down the stem to the roots, this acts like a drinking straw, producing a flow of water and dissolved minerals from roots to leaves. Factors that speed up transpiration will also increase the rate of water uptake from the soil. When water is scarce, or the roots are damaged, it increases a plant’s chance of survival if the transpiration rate can be slowed down. Plants can do this themselves by wilting, or it can be done artificially, like removing some of the leaves from cuttings before they have chance to grow new roots. Transport of Water and Salts in Plants The cells present in the soil dissolve in the water resulting in a salt solution when the soil is watered. The amount of water provided to the soil is quite large; the solution will be dilute salt solution. Roots of plants have some hair like structures called Root hairs originating from cells of single layer epidermis. Dissolved salts are present in the cytoplasm of these cells, also called as CellSap. Cell sap is much concentrated than the salt solution present in the soil. Cell sap is also a salt solution. However it is much concentrated than the salt solution present in the soil. Cell membrane of the root hair is a semi permeable membrane and it separates the cell sap which is the concentrated salt solution from the salt solution in the soil which is the dilute salt solution. Water flows along with solutes from the soil into the cell sap in the root hairs. Thus roots absorb water and salts from the process of osmosis. The absorbed water and the salts move to the next cell once again by Osmosis. The movement of the water from roots to the parts of the plant above the ground is called ASCENT OF SAP. Water is transported from the roots to the leaves through Xylem vessels. Water and salts from the root hairs pass into the epidermal cells then to the cortical cells then to Endodermis cells and finally into Xylem. The transport of water from roots to the leaves is aided by the physical and chemical properties of water and the composition of the walls of the Xylem vessels. These vessels are made of lignin and cellulose which have strong, attraction for water molecules. A thin continuous layer of water Is formed in the walls of xylem vessels. This is because of strong attraction (or) adhesive force between water molecules. Between water molecules there is a strong attraction (or) cohesive force due to formation of hydrogen bond between water molecules. Because of this thousands and thousands of water molecules attach to the water molecules present on the walls. Thus forming a continues column of water molecules. The water molecules already present in the water column either get displaced or moved by the newly entering water molecules, ultimately pushing water towards the leaves. Root Pressure is the pressure exerted by the water molecules absorbed by the root hairs.

Plants have a transport system to move things around. The xylem moves water and solutes, from the roots to the leaves in a process known as transpiration. The phloem moves glucose and amino acids from the leaves all around the plant, in a process known as translocation. The xylem and phloem are arranged in groups called vascular bundles. No, I could not actually suck water up 10m - I did about 4m, but the vacuum pump was easily able to do it and I saw spontaneous boiling on all of our various trials. Footage from this may end up on 2Veritasium. Trees create immense negative pressures of 10's of atmospheres by evaporating water from nanoscale pores, sucking water up 100m in a state where it should be boiling but can't because the perfect xylem tubes contain no air bubbles, just so that most of it can evaporate in the process of absorbing a couple molecules of carbon dioxide. Now I didn't mention the cohesion of water (that it sticks to itself well) but this is implicit in the description of negative pressure, strong surface tension etc.
